These Keto Zucchini fritters are an old family favorite at our house. They are great in the fall when you find those last few enormous zucchinis hiding in the garden.
Often Zucchini dishes turn out too soft or soggy. I use a trick to overcome this problem when making this recipe.
After shredding the zukes, I place all the shreds in a colander and toss it with the salt and set it aside for 15 minutes. The salt draws the liquid out of the shreds and then you can press the zucchini with the back of a wooden spoon or pour the shreds into a cheese cloth and gently squeeze the liquid out. You needn’t squeeze them completely dry though. Then you can pour the zucchini in a large mixing bowl and put together the rest of the recipe. This process makes for a much nicer texture in the finished fritter and they hold together more easily while cooking.
Although it’s optional, I love the addition of 1-2 tablespoons of fresh chopped basil for a bit of extra zing. The patties are about 2.6 carbs each total or 1.7 net carbs — a real bargain for a vegetable dish. (And yup, if you look carefully, there are a few kernels of corn in this batch… a fam request. I took my portion out of the mixture before adding the corn. 😉 .)
The Zucchini Fritters are fantastic as a side dish with fish or chicken or you can let them take center stage and star as the main dish.. I usually offer them with a dollop of plain Greek yogurt and Sriracha sauce on the side. Enjoy! – Laura

Keto Zucchini Fritters with Basil
Ingredients
- 4 cup Zucchini, shredded
- 1 large Egg Whole
- 1/2 tsp Chopped Garlic
- 1/2 cup Freshly Shredded Parmesan
- 1 cup Onions finely chopped
- 2 Tbsp fresh chopped basil
- 1/2 tsp Sea Salt
- 1 Tbsp Olive Oil
Instructions
- In large mixing bowl, stir together shredded zucchini, onion, egg, basil, garlic, salt and grated Parmesan.
- Form into 12 patties.
- Fry in olive oil in large pan till patties are hot and golden on both sides.
- Serve immediately.

Could they be done in the oven instead of being fried?
You could try it, but you would need to grease the pan well or they would stick and it would most likely change the texture a bit. I’ve never tried this so please let us know what temp/ time you used if you have success.
