I make this White Chicken Chili Recipe in the autumn, winter spring and summer. There are never ever any leftovers and I lick the bowl (not the crock pot, though.) and only if no one is looking. 🙂
There are many recipes for White Chicken Chili out there in the Pin-a-sphere, but I’ve adapted my own version from Rita’s Recipe’s Blog, (thank you Rita!), which I found and pinned to my ‘Recipe Me’ board on Pinterest, of course.
Crock pot recipes are considered easy but this one is ridiculously simple.
Just dump in all the ingredients and then add a brick of cream cheese on top. Yup, this is a classic ‘dump’ recipe.
You can even just pop in the chicken while it’s frozen! Then just stir it once half way through. (–Or not — if you aren’t gonna be home, just wait till shortly before serving. This recipe seems to be nearly impossible to ruin. )
When The White Chicken Chili is finished cooking, remove the chicken breasts to a cutting board and with a knife cut into bite-size cubes or shred the chicken with forks. It may be so very fork tender that it will fall apart easily.
after shredding the chicken, serve up steamy bowls of the White Chicken Chili over rice or with tortilla chips. -Hot, spicy, creamy, perfection and no leftovers (at least not at my house. 🙂 ).
White Chicken Chili Crockpot Recipe
This delicious White Chicken chili is excellent served over rice or with tortilla chips on the side.
Ingredients
- 3 frozen chicken breasts
- 1 can petite diced tomatoes
- 1 small can mild green chilies
- 1 can corn kernels , liquid and all
- 1 can black beans , drained and rinsed
- ½ chopped onion
- 3 T . Ranch dressing mix (or 1 packet)
- ½ tsp . cumin
- 1 t chili powder
- ½ tsp salt
- 1 8- oz pkg. cream cheese
Instructions
- Place the chicken breasts in the crock pot.
- Pour over the top of chicken: tomatoes, green chilies, drained beans, corn, chopped onion.
- Sprinkle over the top: The ranch dressing, cumin salt and chili powder.
- Lay brick of cream cheese on top.
- Cook on high 3-5 hours or cook on low for 6-8 hours.
- Stir half way through cooking time to blend the ingredients.
- Before serving: shred the chicken.
- Serve in bowls or over rice.
- Serves 4
