Here is a sweet little treat for April; Strawberry Fools.
My mother used to make these fun faux strawberries at Christmas time. I’ve adapted the traditional recipe to a lovely low carb candy for my new diet. (And yes, Tracy and I are doing great on our low carb regimen. It’s not fast weightloss, but it isn’t painful either. YAY)
The Strawberry Fools recipe comes together quickly. Then you chill them for a bit.
Oh! While the pink from the jello washed off my hands easily, you may wish to use disposable plastic gloves, just in case. 🙂
I topped mine with green toothpicks and paper leaves. The instructions for the toppers are below the recipe.
I’m not fooling when I say these are delicious and only 1.5 carbs a candy. Enjoy!

Notes
For green toothpicks: place toothpicks on paper plated and drop a few drops of green food coloring on them. Roll them with a spoon back to cover in color. Place plate of picks in microwave. Microwave 15 seconds and stir with spoon. Repeat 15 seconds in microwave up to 1 minute, until toothpicks appear dry. Do not over dry or allow to burn! Remove to paper towel and air dry for 1 hour or overnight.
For leaf decoration toppers: Cut green paper squares into leaf toppers as pictured and pierce candy tops with toothpicks. Place on strawberries just before serving.
Or use mint sprigs and decorate candy tops just before serving.

The instruction for how to dye the toothpicks green is in the recipe notes.
Here is how I made the leaf toppers:
Make 36 green paper squares, 1 1/2″ each in size.
Don’t worry too much about doing it all perfectly. Real strawberry leaves are not all the same size!
I didn’t actually draw on each one. This is just so you can see where I cut it. It’s important not to cut too close to the folded corner at the top because you will need a big enough space to poke the toothpick through.
It will look like this when you unfold it. Re-crease the line down the leaves to give it more dimension. Poke toothpick through center and press into top of Strawberry Fools. You may wish to break toothicks in half depending on the size of your candies.
