I love this Low Carb Tuna Salad recipe because it’s comfort food and it represents one of the few meals that can be thrown together quickly — as in only 5 minutes. It’s truly low carb fast food. You can’t even get an order at a Mickey-D’s that fast!
This recipe makes 2 nice servings and at just 164 calories and 4.9 carb (4 net carbs) per serving it’s also easy on your carb budget too. (Avocado is extra! — but worth it. 🙂 )
There is one sneaky ingredient that helps keep the carbs low and the salad moist, but you’d never guess it was in there by tasting it. Enjoy! — Laura
Speedy Low Carb Tuna Salad
Ingredients
- 7 oz Solid White Albacore Tuna
- 2 tbsp Miracle Whip Light
- 2 tbsp Greek Yogurt
- 1/4 tsp Onion Powder
- 4 medium Baby Carrots chopped
- 1 stalk celery chopped
- 2 tsp. lemon juice
- 1/4 tsp lemon pepper seasoning
Instructions
- Mix all ingredients in a small mixing bowl and serve.
