Speedy Keto English Muffins
1 minute is all it takes in the microwave to bake one of these scrumptious Speedy Keto English Muffins.
When I found recipes online for keto English Muffins, I could hardly believe it. After looking over the ingredients, I was subject to further skepticism.
I just didn’t think nut butter, almond flour, eggs and butter baked together in the microwave were going to produce anything like bread, let alone be tasty.
I’m so happy to say I was desperate enough for toast to put my doubts aside and try it anyway.
So I made the batter, greased four ramekins and divided batter between the cups, surprised that it seemed like so little.
I was further surprised when the batter puffed up into a nice 1 inch high muffin, which easily came out of it’s baking cup to cool. It sort of reminded me of that fast-puff-up bread from the Star Wars movie. ;P
After they had all cooled a little, I sliced them in half. I was delighted to see the ‘nooks and crannies’ one expects in an English muffin.
I toasted them under the broiler all at once. (I’ve also used a toaster, since.)
My darling husband was very surprised by the cute little rounds of toasted English muffins sitting on the breakfast table.
This recipe makes four keto English muffins. So that’s just 4 minutes in the microwave total. The hardest part for me of the entire process was waiting for the muffins to toast! So yum.

Speedy Keto English Muffins
Ingredients
- 1/2 cup Almond Meal/Flour
- 1 1/2 tsp coconut flour
- 1 tsp baking powder
- Pinch of salt
- 1/2 tsp xanthan
- 2 large Eggs beaten
- 1 tbsp Butter
- 1 tbsp. almond milk
Instructions
- Prepare 4, four inch ramekins with vegetable cooking spray.
- Melt butter in small micro-proof dish. Set aside.
- Add dry ingredients to a small mixing bowl and stir.
- Add the butter to the dry ingredients.
- Stir in the beaten eggs and almond milk.
- Continue stirring till all ingredients are well incorporated. Do not whip.
- Pour into four ramekins and cook in microwave for 1 minute each, separately.
- Allow to cool slightly and turn out onto cooling rack or paper towels.
- Gently slice in half crosswise.
- Toast the halves if you desire and serve with butter.
