I found the inspiration for a Salsa Chicken recipe that interested me on the ‘Low Carb Recipe Group’ on Facebook. No picture, but the recipe looked zesty and filling. I was so happy to find it. I’d been craving Mexican. Thanks to C.H. who took the time to share it.
Flavor is so important to me when maintaining a disciplined method of eating. Salsa Chicken has just 5 ingredients and comes together quickly. I replaced the sour cream with plain Greek yogurt and it worked quite well.
Once prepped you just pop it in the oven. The smell as it bakes is wonderful. During the last few minutes you sprinkle cheese over the top, so it just has time to spread its melty goodness over the hot chicken mixture.
I served the Salsa Chicken over a bed of steamed zucchini ‘noodles’ which I made using the french fry blade on my mandolin slicer, slicing the zucchinis lengthwise. Then I steamed them a few minutes until tender crisp. ( Rice works, of course, for non-dieters.)
I thought that the Salsa chicken on top of the zucchini noodles made a pretty picture and an appealing dish. And yes it was delicious and satisfied my craving for Mexican food. I’m planning to make it again next week. Enjoy!
Salsa Chicken ~ Low Carb
This low carb Salsa Chicken recipe has just five ingredients and is easy to make. It can satisfy a longing for Mexican food.
Ingredients
- 16 oz boneless skinless Chicken breasts
- ½ cup Salsa
- ½ cup Nonfat Greek Yogurt
- 1½ tsps Taco Seasoning
- ½ cup Colby-Jack Shredded Cheese
Instructions
- Heat oven to 375 degrees.
- spray a 9″ x 9″ with cooking spray.
- Cut up chicken into bite-size pieces.
- Sprinkle taco seasoning over chicken pieces and stir to coat.
- Place seasoned chicken in pan.
- In a small bowl mix salsa and yogurt, pour evenly over chicken
- bake 40 mins at 375.
- Then sprinkle with cheese on top and bake 10 more mins.

This looks so yummy! And I always love a meal that isn’t too time intensive. I’ll save this one for my kids- they are really excited about learning to cook and this will be a great meal to make with them!
