This Quick Keto Tuna Casserole just hit the spot for me when longing for some comfort food.  I started thinking about my mom’s yummy tuna bake and longed for a way to replicate it while still being low carb, keto or LCHF as some like to say.

In looking over the original recipe there were several no-no’s like potatoes, bread crumbs, potato chips and canned cream of mushroom soup. Though I have occasionally used the canned soup, I’ve found that despite it’s convenience it may be best to avoid it altogether.  I’d rather have veggies and their fiber as carbs than just the wheat starch offered in many canned soups.

Making the Casserole

The ingredients are very simple. You may have all of them in your kitchen right now.

I was surprised at how quickly the recipe mixed up. There was very little veggie prep, just a few quick chops and then into the bowl.

It was ready for the oven very quickly.  I suggest preparing the pan by spritzing or coating with a bit of avocado oil.

So below you will find my recipe  makeover of this childhood favorite comfort food.  I feel that the result is both hearty and satisfying.  I also cut a gazillion carbs from the recipe.  (You’re welcome.)

The other great thing about this recipe is that it is quite thrifty.  We all know that thrifty and keto don’t always go hand in hand.

I realize that some of you may look askance at the peas, but remember that they are a legume like beans. I chose to include some because they add fiber and texture in away that few things can. They add 1 carb per serving. You can always leave them out if that’s what will make you happy.

As you can see from the close-up it is hearty and has a creamy texture with the occasional veggie-crunch.  My husband absolutely loved it.

Here is the Nutritional information for this recipe. As you can see, it’s only 3.8 carbs total a serving. If you subtract the fiber it’s 2.7!

Ingredients
  

  • 2 cans Albacore Tuna 5.5 oz each
  • 5 baby carrots chopped
  • 1/4 cup petite peas frozen
  • 1 lg stalk celery chopped
  • 2 tbsp chopped onion chopped finely
  • 1 tsp Lemon pepper seasoning
  • 1 cup shredded Colbyjack cheese or shredded cheddar
  • 1 lg egg
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare an oven-proof 9" x 9" pan or a 9" x 11" pan or small casserole bowl with a spritz of avocado oil.
  • Chop up onion, celery and carrots.
  • in a medium mixing bowl, stir together the tuna, mayonnaise, sour cream, egg, lemon pepper seasoning, chopped vegetables, peas and half of the cheese.
  • Pour mixture into prepared pan and sprinkle cheese over the top.
  • Bake for 30 minutes or until cheese is melted and mixture is is hot and bubbling.
  • Cut into 4 servings and serve while warm.

Notes

Before baking  garnish the casserole by sprinkling with 1/2 tsp. dried chopped parsley or 1 Tbl of chopped green onion.

      I don’t recall what I used the day I wrote the article, but Walden Farm’s Mayo is quite good.
