The other day I noticed that my Oatie Mix-up jar was nearly empty.  What could I make to use up that last half cup despite the small amount of mix?  Chocolate Chip Cookies.  Now.

I looked up several cookie recipes that said they were for a single serving and I translated them using my “Totally Cool Secret” method and I came up with a good ‘guesstimate’ for using the Oatie Mix-up.

Turning on the oven, I gathered my ingredients and a little mixing bowl.  (I think I could have used a cereal bowl, it was such a small batch.) I didn’t bother with a mixer. These yummy darling cookies were whipped up even before I could set up the mixer and plug it in.

I placed four generous-size cookie dough balls on a prepared pan. I put them in the oven and this was one of those times when I stood in front of the oven and just watched.  They began to smell sooooo good.  I really hoped they’d be…well, crunchy, chewy chocolate — perfect.

 About the time that the scent had wafted through the whole house, my husband followed his nose into the kitchen and I took my experiment out of the oven. They had spread to about 3-4 inches in size and were a picture-perfect golden shade.

  Seeing my man’s smile, I couldn’t resist and got two glasses for milk out of the cupboard.  We each enjoyed two warm, yummy, very satisfying cookies, therefore I guess sharing can be a good thing.

Quick Chocolate Chip Cookies for One

Warm Chocolate Chip Cookies for a party of one (or two) in about 15 minutes.
Prep Time 3 minutes
Cook Time 12 minutes
Total Time 15 minutes
Servings 4 cookies

Ingredients
  

  • 1/2 cup Oatie Mix-up
  • 2 T . butter , softened
  • 1/4 tsp . vanilla extract
  • 1 egg yolk
  • 3 T . chocolate chips
  • 1-2 tsps . water (if needed)

Instructions
 

  • Preheat oven to 350 degrees and prepare a baking sheet with vegetable spray or baking parchment.
  • In a small mixing bowl, stir together Oatie mix-up, butter, vanilla and egg yolk.
  • If mixture is too crumbly and doesn’t hold together, stir in 1 or 2 teaspoons of water.
  • Stir in the chocolate chips.
  • Divide dough into four equal balls and place 3-4 inches apart on baking sheet.
  • Bake 10-12 minutes till edges are golden. Allow to cool slightly and serve warm.
