Salmon should always be cooked simply. At least, that’s what I believe.
Baked salmon is just that –simple. And using a baking method with this fish, when done correctly, is the best way to guarantee a flavorful and moist salmon filet.
Today I’m sharing my recipe for the Pecan Crusted baked Salmon. It is my absolute favorite way to prepare salmon.
It has a very short prep time. This time it took a smidgen longer, as I had purchased a large fillet with the skin on the back. I scraped the skin gently with a sharp knife to remove any scales and rinsed it. As I wasn’t presenting it too company this time, I chose to cut it into individual fillets before cooking. The flakes of pepper and seasoning you see is a dash of lemon pepper seasoning that i put on the fish just before topping with the chopped pecans and parsley. Here it is just before going into the oven.
Because it is in the oven there is no ‘hovering factor’ in this recipe as there is in frying, steaming or sauteing. It bakes quickly too. You can put it in the oven and have just enough time (18-24 mins.) to set the table and make a salad or kick back for a few minutes. 🙂
I guess this recipe isn’t strictly Paleo because of the butter. I can however guarantee it is low a carb dish and delicious. (Of course a yummy and seductive Yukon Gold potato can change all of that!)

Pecan Crusted Baked Salmon
This simple recipe makes a moist and flavorful salmon fillet with a topping of toasted pecan goodness.
Ingredients
- 2 lbs. Salmon fillets
- 4 T melted butter
- 4 T lemon juice
- 1 tsp lemon pepper seasoning
- Topping:
- 1/2 cup finely chopped pecans
- 1/2 tsp chopped parsley opt
Instructions
- Heat oven to 400 degrees.
- prepare a 9″ x 18″ baking pan with vegetable spray.
- Place clean, rinsed and dried salmon fillets in pan.
- Stir melted butter and lemon juice together.
- Spoon butter mixture gently over salmon.
- Sprinkle a dash of lemon pepper seasoning on each fillet.
- Stir parsley and chopped pecans together.
- Sprinkle the pecan topping evenly over salmon fillets.
- Place in oven for 18-22 minutes or until salmon is just cooked through and flakes with a fork.
