The first time I tasted Peanut Butter Fingers Bars I knew there could never be enough of them.
I got the recipe from my son-in-law and adapted it to the Baking Outside the Box Oatie Mix-up. I love using the mix-ups and Oatie is one of my favorites.
The BOTB mixes make it so easy. My niece who made lots of cookies as a cheerleader, once called it “Easy Bake for teenagers”. I had to laugh. (Easy bake for grown-ups too, I thought.) She enjoyed whipping up cookies that were truly homemade, but with the ease and thriftiness of a mix.
The sweet and chewy texture, the salty peanut butter and smooth chocolate will make the Peanut Butter Fingers impossible to keep (or hide) for very long. They can be frozen for make ahead or travel and are great to take to a picnic or party.

My son-in-law suggests topping the Peanut Butter Fingers with, Baker’s Chocolate One Bowl Frosting.
Peanut Butter Fingers – Bars (BOTB Style)
Ingredients
Bar base:
- 2 1/4 Cups Oatie Mix-up
- 1/3 Cup butter
- 1/3 Cup peanut butter (crunchy opt.)
- 1 egg
- 1 tsp . vanilla
Topping:
- 1/2 Cup peanut butter (crunchy optional)
- 1 Cup chocolate buttercream frosting
Instructions
- Heat oven to 325 degrees.
- Grease a 9″ x 9″ square pan.
- Stir, combining all the ingredients for the bar base in a medium-size bowl.
- Press into prepared pan.
- Bake for 20 minutes.
- Remove from oven and gently flatten bar base with a wooden spoon or spatula.
- While still warm, spread with 1/2 Cup peanut butter.
- Allow to cool and then gently spread chocolate frosting on top.
- Cut into 18 ‘fingers’.

Ingredients
- Bar base:
- 3/4 Cup butter
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 egg
- 3/4 cup peanut butter
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 tsp. vanilla
- 1 1/2 cups flour
- 1 1/2 cups oatmeal
- Topping:
- 1 cup peanut butter
- 2 cups chocolate butter cream frosting
Instructions
- Heat oven to 325 degrees.
- Grease a 9″ x 9″ square pan.
- In a large mixing bowl, combine butter and sugar, add egg, peanut butter, baking soda, salt and vanilla. Mix well.
- Press into prepared pan.
- Bake for 20 minutes.
- Remove from oven and gently flatten bar base with a wooden spoon or spatula.
- While still warm, spread with 1 cup peanut butter.
- Allow to cool and then gently spread chocolate frosting on top.
- Cut into 36 ‘fingers’.
