Easy Peasy One Pot Macaroni and Cheese
Macaroni and Cheese is one of my all-time favorite comfort foods. It takes me straight back to childhood. I do admit however that although I grew up loving the blue box, my taste buds have become a bit more discerning over time.
Enter this recipe for one pot macaroni and cheese. There are quite a few versions for inspiration out there*. This is my own variant of several I have tried.
As you can see, I chose to use the add-ins of ham and peas this time. Almost everyone has a favorite combo for mac-n-cheese. This recipe works well for combo-lovers as well as purists.
This recipe comes together quite quickly. It takes about 20 minutes start to finish. I added in the ham and peas about half-way through the cooking time so that they would be heated through before I stirred in the cheese and sour cream.
This is a particularly flavorful and creamy version. It makes macaroni and cheese seem almost sophisticated. Almost. (There is still the child part of me that can’t wait for the salty gooey goodness of it on my tongue.)

Easy Peasy One Pot Macaroni and Cheese
Ingredients
- 3 cups dry elbow macaroni or small shell pasta
- 4 cups milk
- 2 ½ cups shredded cheese
- 1 tsp. salt
- Pinch cayenne
- 1 tsp. Dijon mustard
- 1/2 cup peas
- 1 cup chopped cooked ham
- 1/3 cup sour cream opt
Instructions
- Stir together pasta and milk in a large saucepan.
- Bring to simmer, stirring often. Do not allow mixture to boil.
- Adding ham and peas halfway through cooking time, cook 12-15 minutes until pasta is al dente.
- Remove from heat and add salt, mustard, cayenne and cheese.
- If you would like a creamier dish, stir in the sour cream.
- Serve at once.
