Magic Cauliflower?  Low Carb Pizza?  Comfort food on a diet?  Yes, oh yes.

It’s the new year and time for me to think about leaving the holidays behind.  Really behind.  Today I’m sharing two of my favorite go-to low carb recipes.

Here’s How to Make Magic CauliflowerIt’s a simple process.  Start with a head of cauliflower and then steam it to just fork-tender.  Allow to cool a bit.

Then coarsely grate the entire head by hand or in a food processor. (My 25 year old Bosche runs like it is brand new.  I will be sad when I need to replace it someday.)

 The cauliflower  comes out looking something like coconut or rice.  In fact at this point it can be served as a rice replacement, if desired.

 The magical thing about cauliflower is that it adapts to so many different uses and takes on the flavors of the things that are with it.  It is also quite filling for a non-starchy veggie.

If you do not intend to use all of it immediately it can be placed in a freezer bag, labeled and tossed in the freezer for up to 4 months.  Great to have on hand.

Just remember that after thawing you will need to gently squeeze out some of the excess liquid.  But do not squeeze out too much or it will be dry and tough.  

You can make fake rice, great fake mashed potatoes, hash browns (get recipe link below), tortillas and my personal favorite; pizza crust.  

Oh!  Have I mentioned that according to the Fitday app a 1/2 cup steamed cauliflower is 2.5 grams of carbohydrate?  A fact totally worth knowing.

How to make the Magic Cauliflower Pizza Crusts:

Prepare a pan by drawing 6 inch circles on  baking parchment. Then flip the paper face down on the pan.

  Great tip: Use a spritz of vegetable spray on the pan to hold the paper in place.

 As you can see from the picture I am still shamelessly using my Christmas dishes.  I like them more than my everyday dishes.

First you make the pizza crust mixture and  then dole it out in 1/2 cup amounts onto the parchment circles. Next pat it into circles that are about 1/4″ high.

As you can see, I used a teaspoon of cornmeal. (Naughty, I know, but it makes the texture more authentic.  If using, add 1/2 gram carb to each crust)

Bake the crusts for about 10 minutes until they are just beginning to brown.   Allow them to cool slightly and  then flip them over with a spatula.

This is the side you will decorate.   Gathering my toppings for the pizzas, I used Contadina squeezable pizza sauce (2 T. is 3 grams carbs).

You can use a variety of toppings like sausage, mushrooms, pepperoni, grated cheese, Parmesan, Italian seasoning and various chopped veggies like bell pepper, onion and shredded carrots.

 I made both meat lover’s and veggie pizzas and of course, you should use what suits you best.

Return the pizzas to the oven and bake for another 10-15 minutes until cheese is bubbly.

Serve it immediately, in slices or with a fork.  Enjoy! Laura

Servings 4 six inch Pizza Crusts

Ingredients
  

  • 2 Cups grated cauliflower
  • 2 T . parmesan cheese
  • 1 egg
  • 1 tsp . olive oil
  • Pinch salt
  • ¼ tsp Italian herbs (opt)
  • ½ cup cheese , grated (mozzarella or Colby jack or cheddar.)

Instructions
 

  • Heat oven to 400 degrees.
  • Important: If using frozen cauliflower, thaw and then squeeze lightly to drain a bit
  • of liquid from it before working with it.
  • Mix all the ingredients together in a medium mixing bowl.
  • Draw 4 six-inch circles on a piece of baking parchment and place pencil-side
  • down on a baking sheet. Or, alternatively, grease the baking sheet.
  • Measure four ½ cups pizza crust mixture mounds onto circles.
  • Gently pat into 6 inch circles about ¼ inch high.
  • Bake for 10-12, till firmed up.
  • Allow to cool for a few minutes and then using spatula, flip crusts over.
  • Decorate tops with pizza toppings like sauce, pepperoni, meats, veggies,
  • and cheeses. Just use your favorites.
  • Bake in oven until cheese is bubbling 10-15 minutes. Do not allow to scorch.
  • Let pizza cool slightly. Slice and enjoy.
  • 1 six-inch crust equals about 2.5 grams of carbohydrates. Other carbs in pizza toppings are additional.

Notes

Baker’s Secrets: Skip the Italian herbs when using as a tortilla replacement. Great base for a ‘taco’ salad.
