Lumpy Bumpy Bran Muffins Recipe
Bran Muffins are often the unwelcome guest in the muffin basket. But these are so good they just couldn’t be named ‘Bran Muffins’ like some ordinary round, brown brick of a muffin.
In the picture below you can see the batter and spy many of the ingredients I used in this muffin recipe. But there is one ingredient that can’t be seen.
It’s what makes these the Lumpy Bumpy Muffins what they are: Bran Cereal.
I know… I know. Bran muffins are supposed to be dry and tasteless. Right? Wrong. These are moist and taste great with a hint of cinnamon, ginger and nutmeg in them.
These are a pleasant way of sneaking a bit of extra fiber into the family’s diet. Each muffin contains over 3 grams of fiber. (That’s more than in a slice of most brands of whole wheat bread.)
I use two little tricks when I make the Lumpy Bumpy Muffins:
The first trick is one of convenience. The original Kellog’s Bran Muffin recipe (that my Mom used) called for brown sugar. But there isn’t any brown sugar in the Muffin and Quick Bread Mix-up.
Could you skip the brown sugar? Sure. And they would no doubt taste fine. But I love the carmel-ee flavor brown sugar lends to baked goods. So what did I do? — A bit of liquid magic. I added a tablespoon of molasses to my batter. That’s right. After all, that’s what brown sugar is – white sugar with molasses in it.
The second trick is one every baker should know: If you have a muffin pan that is only partially filled with batter when you put it in the oven, put about a tablespoon of water in each empty well. ( See above.)
It will keep the pan from overheating and scorching and the baked goods will cook more evenly than if you don’t do this. Trust me. Experience is speaking here.
Maybe there is just one more trick; I hide the Bran Box before I call everyone in to breakfast….SHHHH…. they only need to know that the muffins are warm and sweet. –You’ll know the rest.
Easy Bran Muffin Recipe with Muffin Mix
These muffins are delicious and moist and contain healthy fiber, so hide the box of bran cereal before serving!
Ingredients
- 1 3/4 cups Muffin and Quick Bread Mix-up
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1 1/2 cups Bran Cereal
- 1 1/4 cups boiling water
- 1 T molasses
- 3/4 cup milk
- 1/4 cup butter , softened
- 1 egg
- 1/2 cup raisins
Instructions
- Preheat oven to 400 degrees. Line muffin tin with cupcake liners and lightly spritz with vegetable cooking spray.
- In a mixing bowl, stir together Muffin and Quick Bread Mix-up and spices.
- In a separate bowl, stir cereal and boiling water together; allow cereal mixture to rest 2-4 minutes, absorbing water.
- Pour softened cereal over dry ingredients and add milk, butter, egg and molasses. Mix until combined, but do not over-beat.
- Stir in raisins.
- Dollop the batter evenly into 18 lined muffin cups.
- Bake 15-18.
Notes
Pour a tablespoon of water into each empty well in 2nd muffin tin to keep pan from scorching.
