Super simple and fast low carb pizza. 4.4 net carbs and ready in under 10 minutes

So this Low Carb Personal Pizza is a lovely accident.  I ran out of riced cauliflower, from which I usually make pizza crust.  (See my cauliflower pizza crust recipe here.)

So in casting about for a platform for my pizza toppings, I spied a leftover low carb english muffin.

I’d made Speedy English Muffins for breakfast and just happened to have an extra.  Oh Boy!  These English muffins are quite tasty and satisfying ad they only take 1 minute in the microwave to bake.

I just had to show you how beautifully the muffin batter puffs up and they taste delicious.

I felt certain that once it was split and toasted it would make two very nice little pizzas for my lunch. (And I figured out that these are just 4.4 net carbs.)

I toasted the split muffin lightly under the broiler and then  added pizza sauce, mozzarella and pepperoni.  I placed them back under the broiler and waited until the cheese bubbled.

In the less than five minutes lunch was ready and bit into my little low carb personal Pizza.  Unfortunately, it smelled so good that I forgot to take a picture.  Enjoy! – Laura

Ingredients
  

  • 1 low carb english muffin See notes for recipe link.
  • 4 Tbl Contadina Pizza Sauce or sauce of your choice.
  • 1/4 cup shredded mozzarella cheese
  • 6 slices of pepperoni

Instructions
 

  • Lightly toast split English muffin under the broiler, on pan , 1-2 minutes.
  • Add sauce, cheese and pepperoni to muffins halves.
  • Replace pan under broiler and broil until cheese bubbles, 3-5 minutes.
  • Serve Hot
