Cucumber Sushi towers came to mind after I saw a mouthwatering picture of a cucumber slice with sushi mixture on it on Instagram. I was instantly hooked. I had to know how. Now!
There was no recipe at that time, so I set out on a quest to develop a recipe that would work on my low carb woe. Below is the recipe for Low Carb Cucumber Sushi Towers that I worked up in my kitchen.
These are made sans the seaweed wrap, though you could roll them first and then slide them into the cucumber towers.
I like recipes that are flexible and this one is low carb but the variations are too many to give a meaningful carb count.
Are there variations? Certainly. Use whatever leftover meat you may have on hand. Chicken is particularly good. If you want to change up the flavor profile, then instead of the ingredients in the recipe below, use marinara and Italian seasoning with mozzarella, hamburger or sausage for a fun snack.
If you wish, you can simply slice up the cucumbers and use the Sushi Mixture as a dip.
It totally satisfied my craving to go out for Chinese which was a good thing! The only thing I missed was the fortune at the end of the meal. 😀 Enjoy!
