Watch it, I’m holding a loaded cauliflower! Well, OK, not really. But get out your fork, because this recipe is good.
You’ve probably seen my cauliflower hash browns recipe and you may have guessed that not only do I like cauliflower but I use it to pull the old ‘switcheroo’ to replace starchy potatoes all the time. (OK, so I love potatoes too, but just not right now.)
Today I’m sharing an old time tried and true recipe. My Mother-in-law (whom I adore) gave me this recipe at a family reunion years ago. I enjoyed it so much I could have eaten the entire thing by myself, so it’s probably a good thing it was a family reunion and I wasn’t left alone with a loaded cauliflower. 😉
I love the presentation of this recipe. You serve the head whole, covered in sauce, cheese and bacon. It’s a great veggie show stopper for company.
I use Light Miracle whip in the recipe but if you wanted to cut back on carbs even further, you could replace it with sour cream and I bet the taste would still be fabulous. Enjoy! -Laura

Loaded Cauliflower Head Recipe — Low Carb
Delicious Loaded Cauliflower Head recipe is Low Carb and worthy of company.
Ingredients
- 1 medium head cauliflower
- ¼ cup light miracle whip
- 2 tsp. yellow mustard
- 1/3 cup shredded Colby Jack cheese.
- 2 slices cooked bacon crumbled
Instructions
- Cook (steam) cauliflower in pan on stovetop for 10-15 mins.–Just until fork tender, but not soft.
- Stir together mustard and Light Miracle Whip in a small bowl.
- Place cauliflower in small, shallow, casserole or baking pan. (About 9”x 9”).
- Spread mustard sauce over cauliflower and sprinkle with cheese.
- Place in oven for 10 minutes or until cheese is bubbly and hot.
- Remove from oven and sprinkle bacon over the top.
- Serve immediately.
Notes
If you want to go even lower carb try replacing the Miracle whip with sour cream.

When Laura presented this wonderful recipe I was so taken by the presentation that I failed to notice the barbecue chicken which was supposed to be the main dish.
Regular fat mayo has only 0.1g carbs, while the light listed in the recipe has 1.4g for the same serving size. I have found that almost anything listed as low fat, light, fat-free, etc. always has fillers that give them that mouth feel that fat has. These fillers are carb-y starches. As such, I always buy the full fat versions of most items (milk, mayo, etc). unless I can get a good version of it through Walden Farms (0 calories, 0 fat, 0 carbs). BTW, many of their items have a very chemical taste to them, but some are quite good.
