Here is my St Patrick’s Day offering to bring the ‘luck O’ the Irish’ to you; Irish Kisses recipe with a free printable of Irish phrases for you to download.
I made delicate meringue cookies the easy way with Jolly Rancher’s Gelatin using the Green Apple flavor. (I also added a few drops of green food coloring.) They whipped up very quickly and I had them in the oven before I could say ‘Erin Go Bragh’! — Ireland forever. (Thank you to my darling daughter-in-law, Lani, who lent me her too-cute measuring spoons. 🙂 )
I always worry when it comes to getting egg whites stiff enough for any recipe but these worked beautifully with the gelatin powder and the cream of tartar. They held their shape well when I piped them onto the parchment and added sprinkles. they were surprisingly easy.
They puffed up a bit while baking.
After baking and cooling I wrapped them in foil squares to look like chocolate kisses and added a little Irish phrase to the top of each.
These cookies are light and crispy, melt-in-your-mouth good and would be the perfect end to a St. Patty’s day feast.
If you’d prefer a mint or vanilla cookie, be certain to read my notes at the end of the recipe. These would be delish with mini chocolate chips stirred into the batter or the baked cookies dipped in chocolate or other complimentary flavor.
Hmmmm… I may have to make more immediately. Enjoy! And Happy St. Patrick’s Day! –Laura

Irish Kisses
We really enjoyed the Green Apple flavor gelatin but you can use flavoring and plain gelatin to make it whatever flavor you desire. See my notes at the end of the recipe on how to modify it. The piping tip I used was a 1M Wilton tip.

- For Leprechaun Kisses: Make green meringues and cut squares of foil to wrap cookies like candy kisses. Twist an Irish phrase strip into top of each kiss. (Download phrases at https://bakingoutsidethebox.com . )
Notes
(**Baker’s Secrets: Use any flavor gelatin you like. I used Jolly Rancher Green Apple. If you want to make it your own flavor, use a ½ packet of unflavored gelatin and increase sugar to 1 cup. Omit lemon juice. Then simply add in several drops of flavoring like peppermint or vanilla, to taste
