Lemon Lavender Herbal Ice Tea. The idea hit me one day last summer because I have a yard full of lavender (and bees).
There are lemon lavender cakes and cookies, so why not something cool to drink? The flavor is sophisticated and old fashioned all at once.
This year I decided to try adding a bit of agave as the sweetener and poured this nectar into popsicle molds. Voila! Grown-up popsicles. Delish.
It takes just a few simple ingredients:
Lemon Lavender Herbal Ice Tea
You will need:
6 packets of I Love Lemon Tea.
2-3 tablespoons fresh lavender blossoms (or use 1/2 if dried)
juice of 1 lemon
2 quarts of water.
1. Place lavender blossoms in a tea-ball or wrap in cheesecloth.
2. Bring the water to boil in a large pot and turn off heat
3. Steep teabags with lavender blossoms 30-60 mins. in covered pot.
4. Remove tea bags and lavender from pot. Strain if needed.
5. Stir in juice of lemon and pour into pitcher and refrigerate.
6. Serve over lots of ice and sweeten as desired.
To make popsicles: Stir 3-4 Tablespoons Agave syrup or honey into 2 cups Lemon Lavender Tea and pour into popsicle molds and freeze.
Note: Next time I make this I am going to add a sliver or two of ginger root, because it just sounds yum. Enjoy!
