This easy Keto Baked Mozzarella Sticks recipe came about because I was seriously in need of some restaurant-style comfort food.
After looking quite a few recipes over, I realized that the process to prepare for cooking was quite simple. –Cheese sticks, egg wash, crumbs and then repeat the eggs wash and crumbs. A lot of people cut a block of Mozzarella into sticks, which is fine. I used the string cheese I already had in the refrigerator. (You know me I’m all about using whatever you have at hand.) Either will work here.
Virtually all the recipes I looked at called for dry grated Parmesan cheese and bread crumbs for the crumb coating. I don’t usually buy the ‘shaker’ Parmesan because I like the fresh grated, but I could see the need for it in this recipe. Read the recipe below to see what I came up with for low carb bread crumbs.
I had read tons of instructions for deep frying and the few I’d read that were baked, admitted there was ‘ooze’. Ewww. But on the other hand I am sitting here typing this with the speckles of burn marks on my right arm from a grease splash while cooking onions. The idea of a whole pot of boiling oil made me think maybe baking wouldn’t be such a bad idea and lot safer and less messy.
I remembered a crazy little secret for baking things that should be deep-fried: Freeze them first. You can see that they turned out quite well. I served them hot with my favorite low sugar / low carb marinara jarred sauce. Enjoy! — Laura

Easy Low Carb Baked Mozzarella Sticks
Ingredients
- 6 Mozzarella Sticks
- 1/2 cup grated dry Parmesan cheese
- 1 1/2 cups fried pork rinds
- 1 tsp Italian seasoning blend
- 1 egg
- 2 tsps water
Instructions
- Cut Mozzarella sticks in half cross-wise and set aside.
- Place egg and water in a small shallow dish or pan. Whisk to mix.
- Crush pork rinds with rolling pin or crush in blender. Should make about 1/2 cup pork rind crumbs.
- Place Parmesan, crushed pork rinds and Italian seasoning in a shallow baking pan
- Dip Mozzarella sticks, one at a time, first in egg wash, then crumbs, then repeat both egg wash and crumbs for second coating.
- Set mozzarella on dish or pan that will fit in the freezer.
- Freeze for two hours
- After two hours: heat oven to 500 degrees.
- Working quickly cover a baking pan in parchment or grease it.
- Place frozen mozzarella sticks directly from freezer onto pan.
- Spray with a light coating of olive oil. (optional)
- Bake for 6-8 minutes, just till coating is brown and cheese is warm and soft.
- Serve immediately with warm marinara sauce, if desired.
