Try this Easy Bran Muffin Recipe
It is a great example of how one can take an old scratch recipe and turn it into a Baking Outside the Box Mix-up recipe. I got the recipe off of a box of Kellog’s All Bran Cereal and then ‘translated’ it into a ‘Mix-up’ recipe using the Muffin Mix-up in under 30 seconds.

The easy bran muffin recipe is simple to whip up and is perfect when breakfast is ‘grab-n-go’. They hold together well for travel. These puppies have accompanied us on business trips.
When I’m crammed for kitchen time I make them the night before I need them or on the weekend. They will last for several days at room temperature and freeze well.
Oh and did I mention they are tasty??? They are very good and your family never need know you are feeding them fiber. 🙂
A couple of advantages of making your own muffins are that there will be no temptation to stop at an over-priced hot beverage shop for an over-sized muffin that has regret as an ingredient. You will also will save a ton of $$$$. Shop muffins are pricey.

Easy Bran Muffin Recipe with Muffin Mix
Ingredients
- 1 3/4 cups Muffin and Quick Bread Mix-up
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1 1/2 cups Bran Cereal
- 1 1/4 cups boiling water
- 1 T molasses
- 3/4 cup milk
- 1/4 cup butter , softened
- 1 egg
- 1/2 cup raisins
Instructions
- Preheat oven to 400 degrees. Line muffin tin with cupcake liners and lightly spritz with vegetable cooking spray.
- In a mixing bowl, stir together Muffin and Quick Bread Mix-up and spices.
- In a separate bowl, stir cereal and boiling water together; allow cereal mixture to rest 2-4 minutes, absorbing water.
- Pour softened cereal over dry ingredients and add milk, butter, egg and molasses. Mix until combined, but do not over-beat.
- Stir in raisins.
- Dollop the batter evenly into 18 lined muffin cups.
- Bake 15-18.
