This Easy Chicken Pot Pie Recipe has a crumble crust. It  is the perfect ‘make-over’ for chicken or turkey.

On super-busy days when I have been running errands all afternoon, wrangling my computer (or grandkids!)  or grocery shopping too close to dinner time, I buy a deli chicken and some french bread.  I make a tossed salad at home and serve it all up to my darling fam who have no idea how close they came to peanut butter sandwiches for dinner. 😉

Then the next day there it is, sitting in my fridge like a derelict:  leftover chicken.  No one is going to eat it straight from the fridge, so I have to get clever. I have been known to chop it up for sandwiches, quesadillas, stuffing casserole and many other clever disguises.  However, this is my new favorite.

I wanted to do something a little different.  There is an old recipe for chicken pot pie using Bisquick that has a biscuit-like topping.  I’ve used it before and thought it was so-so.  It always seemed like too much biscuit.  So this pie was an experiment for me. A happy one.

I wanted a crust on top of this pie that was crispy, but not too fussy. –Still, I used the Bisquick for the crust, because that’s what was in the cupboard.   It was buttery good like a real crust.  I totally skipped a bottom crust…they can be soggy and overbearing.

It also had to be simple and fast. –You just throw the filling ingredients together, pour it into the pan and drop the dough crumbles on top.  It takes only 30 minutes to bake.

I’m sharing my new creation with you.  I think it turned out so well that I might actually buy a deli chicken when I’m not stressed out. Enjoy.

Crumble Crust Chicken Pot Pie

Ingredients
  

Chicken Filling:

  • 2 cups mixed vegetables
  • 3 cups chopped or shredded cooked chicken
  • 1 can cream of mushroom or cream of chicken soup
  • 1/2 cup plain Greek yogurt
  • 1/4 cup shredded cheddar or Colby-jack cheese
  • 1/4 tsp poultry seasoning (opt)
  • 1-2 T . finely chopped onion
  • 1/4 tsp chopped garlic (1 clove)

Crumble Crust:

  • 1 cup bisquick or other baking mix
  • 4 T butter , melted
  • 1/4 cup milk
  • 1/4 cup shredded cheddar or Colby jack cheese
  • 1/2 tsp . dried parsley (opt)

Instructions
 

  • Heat oven to 400 degrees
  • Prepare a pie pan with vegetable spray.
  • Stir together all the chicken filling ingredients in a medium bowl. Set aside.
  • In a small mixing bowl, stir together crust ingredients.
  • Pour filling into prepared pie pan,
  • Pinch off bits of dough and drop evenly over pie.
  • Bake for 30 minutes
