I got a request at home recently for some deep chocolate goodness…now!

I had been toying with an idea of making a recipe for a small batch of chocolate, chocolate chip cookies. You know, something along the lines of a chocolate crinkle-type cookie, but heartier and more chocolaty. This is what led me to the baked-up goodness of the Chocolate Quartet Cookies.

I used the Oatie Mix-up, cocoa and three kinds of chocolate chips.
The results were one dozen cookie antidotes for chocolate cravings. Take two with a large glass of milk. ~Sigh of relief.~ Enjoy!

Chocolate Quartet Cookies
Deeply dark and luscious mixture of chocolates in one easy to make cookie recipe
Ingredients
- Serves: 12 cookies
- Quell a chocolate craving with this small batch cookie recipe of 4 satisfying types of chocolate in a delightful chewy oat base.
- Ingredients
- 1 C Oatie Mix-up
- 4 T . butter , softened
- 1/2 tsp . vanilla extract
- 2 egg yolks
- 3 T baking cocoa
- 1-2 tsps . water , if needed
- 2 T . each of white , milk, and semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees and prepare a baking sheet with vegetable spray or baking parchment.
- In a small mixing bowl, stir together Oatie mix-up, cocoa, butter, vanilla and egg yolks.
- If mixture is too crumbly and doesn’t hold together, stir in 1 or 2 teaspoons of water.
- Stir in the chips.
- Divide dough into 10-12 equal balls and place 2 inches apart on prepared baking sheet.
- Bake 9-11 minutes till just set. Allow to cool slightly and serve warm.
- Recipe can be doubled, if desired
- Serving size: one cookie
