One of my favorite dishes when we (used) to go out for Chinese food is ‘Lettuce Wraps’ .  They seem innocent enough on the menu and  ‘Pei Wei’s’ restaurant is nice enough to have the nutritional count on their  website.  For half a serving it’s not too bad calorie-wise, but the salt is is way-way-way over the top.  And I am also tempted my other delights on the menu…

I promised to tell you what I made with the reserved half of the  Asian Marinated Pork Chops.  I Made these Chinese Pork Lettuce Wraps to cheers from husband.

Wrapped in lettuce these yummy ingredients will never even be recognized by your family as the pork chops from a few nights ago. At least mine didn’t.  

A Couple of Prep Tips

First,  I cut up the chops into bite size pieces. I warmed the oil in a large saute skillet and tossed in the ginger and garlic so that it would infuse into the oil and then added the the chopped up meat.

It should also be mentioned that using a few drops of sesame oil with the olive oil is a nice addition.  It gives a low, earthy / nutty undertone to the dish.

Butter lettuce is my first choice as it ‘cups’ around the meat mixture well.  If you use romaine lettuce you will have more success rolling it up if you carefully slice part of the hard white ridge away from the outside of the sturdier leaves. They will be more pliable.

They have a bit of crunch with the lettuce, peanuts and carrots.  These things add fiber as well so if you’re only counting net carbs, these are an amazing 2.8 carbs per wrap.

My family gobbled these up without even knowing they were keto / low carb.  I got told they are delicious and I need to make more next time. The blended flavors totally satisfied my cravings for Chinese food.  Enjoy!

Ingredients
  

  • 1/4 tsp. chopped garlic
  • 1 T. minced fresh ginger
  • 2 T. Rice Vinegar
  • 2 T. teriyaki sauce (Lawry's was used for low carb count)
  • 2 T. soy sauce
  • 1 tsp Glucomanan powder (cornstarch replacement)
  • 1 cup shredded carrots
  • 3 chopped green onions
  • 2 oz. roasted peanuts
  • 16 oz cooked boneless pork chops, chopped up about 4 chops
  • 2 tsp. olive oil
  • 8 butter lettuce leaves (romaine as a replacement)

Instructions
 

  • Warm chopped meat, garlic and ginger in in olive oil in large skillet.
  • In a small bowl stir together vinegar, teriyaki sauce, soy sauce and cornstarch.
  • Pour vinegar mixture over meat in pan and add the carrots and onions.
  • Stir and cook for about 3 minutes until meat is warmed through and mixture has thickened slightly. Serve immediately on washed, prepped lettuce leaves.

Notes

Glucomannan was used as it thickens in warm liquid well.  You can try using1/2 tsp. xanthan powder to replace the glucomannan, but it may not thicken while the dish is warm.
