It’s family reunion time and I made these Cake Batter Chex Bars to share with the family.   And yes, this treat represents a seriously fabulous cheat on my low carb diet. (Keeping my promise to occasionally still post desserts!)

After asking other family members what they were bringing  and knowing there would be several ‘cereal bar’ recipes  with chocolate I chose the Cake Batter Chex bars as something a little different but still hoping to please the crowd.

My problem with homemade cake batter-flavored things is that they never really taste like cake batter.  And more specifically; yellow cake batter.

A few recipes suggested dumping in actual cake mix into the marshmallow coating but this did not appeal to me.  Another recipe suggested that Vanilla Chex taste cake-like but I couldn’t find it at my local store. Nor could I find any ‘cake batter flavoring’ without mail-ordering it.😒

I finally chose to add a good dose of vanilla to the melted marshmallow coating as well as something I’ve used only in rare circumstances…butter flavoring. I had a suscipicion that this flavor, which really doesn’t taste like butter, was the ‘something’ missing.

The moment I dumped the vanilla and butter flavoring into the half melted marshmallows i knew that these bars were going to taste just like cake batter.

After mixing in the cereal I added some ‘Rainbow Sprinkles’ and white chocolate chips to add a ‘Funfetti’ effect and hint of frosting to the mixture.  My kitchen smelled like ‘cake heaven’.  Oh yum!  –Laura

p.s. I promise I will back be to my low carb self next week.  I’ve lost 15 pounds since March — can’t stop  now!

Cake Batter Chex Bars

These Cake Batter Chex bars come together in a snap and are gluten free.

Ingredients
  

  • 7 cups Rice Chex
  • 10 oz. marshmallows
  • 1/4 tsp. salt
  • 1/4 cup butter
  • 1 1/2 tsp. vanilla
  • 1 tsp. butter flavoring
  • 3 T. Rainbow sprinkles
  • 1/2 cup white chocolate chips opt

Instructions
 

  • Use butter or vegetable spray to grease a 9″ x 18″
  • Melt butter in large saucepan over medium low heat.
  • Add marshmallows and stir.
  • When marshmallows are about half melted, add salt, vanilla and butter flavor stirring to combine and continue stirring until the mixture is smooth.
  • Remove pan from heat from heat.
  • Pour the Rice Chex into marshmallow mixture and stir to coat evenly and thoroughly.
  • When cereal is well coated stir in half the sprinkles and all of the white chocolate chips.
  • Turn mixture into prepared pan and press gently into pan with back of a large, buttered spoon or clean, buttered hands.
  • Sprinkle with remaining sprinkles.
  • Allow bars to cool and set.
  • Cut into 24 bars.
