Better Than Oreos Recipe
Better Than Oreos travel well. I know. I took them to a family reunion.
They are delish and not difficult to make for a sandwich cookie.
It just takes a few minutes with some Brownie Bliss Mix-up, an egg and butter to make the crispy dark chocolate wafers and a recipe of my Marshmallow Creme frosting. A single batch makes 18 sandwiches. (The frosting will cover two batches.)
The dough comes together quickly and is crumbly, but holds together when pressed.
Place tablespoonfuls of dough on a cookie sheet covered in baking parchment and flatten gently as pictured. I found that the cookie’s shapes were more consistent if I flipped them over after flattening them, but I can’t really give you a scientific reason…they just maintained a better shape!
After they’ve come out of the oven and cooled, just pipe a generous dollop of frosting onto half of the cookies. Top with the other half of the batch.
Next time I might add some coconut and crushed almonds for an ‘Almond Joy’ effect or maybe try the chocolate version of the marshmallow frosting….hmmm there is potential here.
Speaking of traveling well; school is starting this week for the kids in my neighborhood and I think this cookie would be a great back-to-school treat to find in a lunchbox. Just 1 cookie makes a satisfying dessert serving.
Oh and incidentally, I made 2 batches for the reunion and they were snapped up quickly, leaving me with a feeling of relief and dismay. But I did manage to rescue one so I could give a proper review to you. Yum, nom, yum.
It’s a tender-crisp dark chocolate cookie filled with a light, but rich frosting. They also freeze well and are food as a frozen treat too. I can’t wait to have an excuse to make them again.
Now go make ’em. 🙂
Better Than Oreos
Ingredients
Chocolate Cookies:
- 3 cups Brownie Bliss Mix-up
- 1/2 cup butter , softened
- 1 large egg
Filling:
- Marshmallow Buttercream Recipe. https://www.bakingoutsidethebox.com/marshmallow-creme-frosting-and-filling/
Instructions
- Preheat the oven to 375 degrees.
- In mixer bowl, mix together Brownie Bliss Mix-up, butter and egg. Mixture will be crumbly but hold together when pressed.
- Using a level tablespoon of dough, drop cookies onto baking sheets prepared with baking parchment or cooking spray.
- With bottom of a glass or a cup measure, gently press each dough drop evenly to about 1/4 inch high and spaced about 1″ apart.
- Bake for 9-11 minutes.
- While cookies are cooling, make the Marshmallow Creme Frosting according to directions. (1 recipe will frost a double batch of the Better Than Oreos Cookies.)
- To assemble the cookies, turn the cookies over so the flat side is facing up on half of the cookies.
- With pastry bag and large piping tip or spoon, dollop frosting into center of half of the flat-side up cookies.
- Gently press the tops onto the frosting to distribute it evenly, but not quite to edge of cookies.
- Allow frosting to set, if you can wait that long. Otherwise pour a big glass of milk and enjoy immediately.
